Daily Prompt: Merry Christmas if you’re celebrating today, Tell us about your favorite holiday tradition.
Merry Christmas everyone!!
I love Christmas, the lights, the decorations and of course the food. My favorite tradition during the holiday season is when my daughter and I decorate the house and put up the tree with all its sparkling lights and bright ornaments.
A new tradition that started when I started dating Nick is going out for Chinese on Christmas, it has now become a much anticipated night for us both and sometimes we can get a group of friends to come out too.
The family always get’s together either the day before Christmas or on Christmas depending on what the majority has to do. It’s always great getting together with my sisters and brothers we have so much fun joking and enjoying the great food everyone prepared. This year I won’t be there nor will I be able to go out for Chinese because this thing called a J.O.B got in the way.
So this year I will send over a couple of side dishes for the family and Nick will bring over Chinese when I get off and we can open presents.
Because I really liked the pineapple casserole that Diamond had made for Thanksgiving I decided to fix that along with a Canadian meat stuffing pie from a coworker who gave me her family recipe that her mom used to make during the holidays.
When the little girl told me she was making something called a pineapple casserole I was a little leery, it had cheese, crackers and pineapples together, ok, I’m game, I’ll try anything at least once. It was surprisingly very good a little too sweet for my tastes so for this recipe I cut the sugar down and added more cheese.
The meat stuffing pie sounded interesting enough for me to want to really try it and the fact that it was a family favorite from my coworker made it a need to try it, but it is one that I will have to work on a little more before I post a recipe for it.
Now off to work I go so that I can hurry home for some Chinese with Nick and the opening of this giant box from my daughter, I love Christmas.

- 2 - 20 oz Cans Pineapple chunks drained, reserve 6 tablespoons
- 6 tablespoons Flour
- 1 cup White sugar I used a half cup
- 2 cups Shredded sharp cheddar I used 2 ½ cups
- 40 Ritz crackers crushed
- 1 cup Butter
- Mix the sugar and flour and gradually add the grated cheese
- Add the drained pineapple and stir until ingredients are well mixed
- Pour into a prepared casserole dish
- In a smaller bowel add cracker crumbs, melted butter and reserved pineapple juice, mix well. Spread crumb mixture on top of pineapple
- Bake for 25-30 minutes or until golden brown
