Everyone that knows me knows that I will cook with whatever I have on hand. I will do some research online or go through my cookbooks to get some ideas or I will just go in the kitchen and start throwing stuff together and sometimes if I’m lucky I actually get something edible out of the deal.
The cool thing about cooking like this is that not only do I save money on my grocery bill I use up all the stuff taking over my pantry, pretty much like that shelf of canned goods that somehow made their way into my life will get used for some good meals and snacks later on this year so be on the look out for those ideas.
As you know I used up most of that chocolate bar the boyfriend gave to me and made some awesome Chocolate Truffles, but I had about five squares of chocolate left to use so I’m wondering what could I do with them to get them outta the way. After thinking I decided I would make cookies, now I didn’t have a few things in the house such as flour or sugar, you know all the basic stuff for baking but I did have some supplies left over from my Tastefully Simple days.
I remembered that I could use their Almond Pound Cake mix to make cookies when I had made some over the holidays, but low and behold I only had the Chocolate Pound Cake mix in my bag of goodies. So I said what the heck why not and what I created can only be called Monster Chocolate Chunk Cookies and they came out wonderful. I will have to stock up on this pound cake mix for sure.
I warned everyone that I was on a mission to start creating more and doing something I love and I’ll write more about that in another post but for today enjoy the cookies and check out a great company that really sells some awesome products.
Monster Chocolate Cookies
- 1 box Chocolate Pound Cake Mix I used Tastefully Simple Classy Chocolate Pound Cake Mix
- 1 ½ stick Butter melted
- 1 Egg
- ½ cup Chocolate chips or grated chocolate bar
- Combine all ingredients
- Drop by tablespoon onto a parchment lined cookie sheet
- Bake at 350 degrees for 8 to 10 minutes
- Cool and enjoy
Well since I was in the baking mood and I still had a pretty much full bag of coconut flakes that I had only used a bit of for the truffles I had made and I knew how much Nick likes coconut I decided to make some Coconut Macaroons. I found a very easy recipe from The Kitchn website which called for nothing but coconut and eggs perfect for what I had on hand and I just added some chocolate and made Almond Joy macaroons.
